Dijon Turnips and Arugula

Makes 4-6 servings

Turnips are an amazing vegetable because they have a starchy vegetable texture yet are light and won't weigh you down feeling bloated. They are also packed with detoxifying indole-3-carbinol making this the perfect dish if you've had a little bit too much luck of the Irish or went crazy on Purim.

1 large onion, thinly sliced
1 large white turnip, peeled and thinly sliced into half moons
1 package organic turkey bacon, cut into 1/4 inch slices width-wise
4-6 cups arugula
1 tbsp olive oil
1 tbsp dijon mustard
1 tbsp apple cider vinegar
Salt and pepper to taste

Heat large pan over medium heat. Add olive oil and onions. Saute onions for 15-20 minutes until they are caramelized. Then add turnip and bacon. Continue to cook over low heat until the turnips are tender. Finally fold in arugula and let wilt for about 3 minutes. Remove from heat and add vinegar, mustard, salt and pepper. Serve immediately or at room temp.
