Grain-Free "Oatmeal"
Because many of my patients wouldn’t dream of starting day without a warm bowl of oatmeal, I created this recipe which is higher in protein and completely grain-free. It is easy to prepare and is just as tasty as the original.
Serves 1
1 apple, cored and sliced
2 tbsp ground flaxseeds
2 tbsp almond flour
1/2 tsp cinnamon
1/2 tsp vanilla extract
Dash Himalayan sea salt
Place apple slices, cinnamon, and vanilla extract in pot and add water till all slices are covered. Bring to a boil and turn down heat to a simmer. Simmer for 5-10 minutes till apple is soft and tender. Remove from heat and process apple and liquid with a hand blender or food processor till smooth. Fold in flaxseeds and almond flour and return to heat. You may need to add more water to thin out the mixture and heat to your desired temperature. Add a dash of salt and serve immediately with optional toppings like coconut flakes, nuts, dried fruit or your favorite non-dairy milk.
Instead of apple you can also use pear or a very ripe banana. For an even quicker “oatmeal” use 1 cup of prepared unsweetened applesauce.
