Sicilian Roasted Brussels Sprouts
Serves 4-6Every Thanksgiving, I'm put on Brussels sprouts duty in the Branin household. This is last year's creation.
1 pound Brussels sprouts, cut in halves
1/4 cup olive oil
1 small onion, chopped
1/4 cup raisins
1/4 cup almonds
3-4 anchovies finely chopped
Salt and pepper to taste
Preheat oven to 400 degrees. Place Brussels sprouts, anchovies and onion on baking sheet and toss with olive oil, bake until golden brown and just cooked through, about 20-25 minutes.
In a dry non-stick pan, heat almonds until they are warm and toasted. Then chop the almonds. In a large bowl, combine Brussels sprouts, raisins and almonds. Season to taste with salt and pepper.
